Campsie Glen Smokehouse – Duncan and the team were the 2016 Delicious Magazine’s Produce Award Winners in the ‘From the Sea’ artisan category with their smoked halibut island cure. It was described as “delicately smoky, with a wonderful texture. It’s hand-sliced to a good thickness. The cure is not too salty and very well judged – and the quality of the fish is so good.” Campsie Glen Smokehouse also sells smoked salmon and smoked trout in both cures – both of which are delicious. As a ‘seafood charcutier’, they cure their salmon, trout and halibut for 7 days, dry out up to 25% of the moisture whilst smoking with the Campsie Glen Smokehouse blend.
