Nicky Elliott has always been passionate about good food and nutrition. She initially trained and worked as a Cordon Bleu chef for many years before changing career and becoming a Health & Beauty PR.

Nicky has always had a keen interest in ingredients and their benefits to the body. As her family grew her interest in food became more focused and she increasingly looked to find healthier alternatives to traditional ingredients.

The Conscientious Cook was created in response to her own personal quest for refined-sugar, dairy and gluten free nutrient-rich yet appetising sweet treats. Nicky explains, “It all began in my kitchen where I started experimenting with alternative ways to sweeten foods.  Coconut palm sugar, rice malt syrup, raw honey, date syrup and maple syrup quickly became my star ingredients, giving the sweetness I wanted, while delivering valuable nutrients to the body.  For the Conscientious Cook I have used natural ingredients to create a range of cakes, snacks and treats which are both delicious and virtuous.”

Each guilt-free recipe uses high quality ingredients in its most natural state.  Avoiding all refined ingredients, especially sugar, Nicky replaces them with seasonal, organic food as well as raw and super foods that have numerous benefits for the mind and body”.
